It is worth buying an ostrich liver in order to enjoy delicious, exotic dishes that can be prepared from it. The liver is often grilled. To do this, it is cut into pieces, rubbed with a mixture of pepper and herbs (no need to salt), poured with soy sauce and put on a wire rack. Fry for no more than five minutes on weakly glowing coals.
The liver will turn out delicious, fried with onions in good vegetable oil.

Sicilian ostrich liver
Cooking ostrich liver is worth it for two reasons – it will be a new experience of taste and a very quick cooking.
2 kilograms of ostrich liver;
6-7 red onions;
50-70 grams of parsley;
1 head of garlic;
0.3 liters of dry white wine;
½ glass of brandy;
100 grams of butter;
100 milliliters of olive oil;
spices to taste.
Cooking method:
Peel the red onion and cut into half rings. Crush or chop the garlic. Chop the parsley. Heat some olive oil and 50 grams of butter in a skillet. Fry the onion until transparent. Then add the garlic, season with salt and pepper, and continue cooking for another 2-3 minutes.
Pour wine into the ingredients. When it has evaporated, add ¾ of the parsley. Remove the pan from the heat.
Now take care of the liver – cut into cubes, 1.5 centimeters thick. Heat any remaining olive oil and butter in a heavy skillet. Fry the liver for 2 minutes on one side and the same amount on the other. Season with salt and pepper to taste. In the last step, pour in the cognac, heat for no more than 30-40 seconds and put the meat on a serving dish.
Pour the cognac sauce over the liver, top with the onion dressing and garnish with the remaining parsley. Enjoy your meal!
